The cuisine at Emilio Innobar fuses a subtle blend of Mexican, Asian and Mediterranean flavours, which the restaurant’s head chef Emilio Castrejón calls ‘Fine Fusion’. Located in the heart of Palma, the chefs at the restaurant are well travelled with their food reflecting their culinary experiences.
Emilio himself has travelled across the world working in the USA, Germany and for 12 years in Japan, where he learned to slice fish for sashimi and tataki. Together with some of the very first people he employed and a number of very young and talented chefs, he has now moved on to the next step at his popular restaurant.

Every dish will astound you with its phenomenal flavour. It is well recommended to try the Tataki of Dorada and the Ceviche, or just ask Emilio to prepare a selection of his choice – you certainly won’t be disappointed.
